Caramelized Onion Quiche

This recipe is a treat for any holiday party or even a fancy weeknight meal. Local ingredients make it shine! 


  •     1 ½  cups flour (any kind)
  •     1t sugar
  •     ½  tsp salt
  •     ½  cup vegetable oil
  •     2T milk of your choice
  • 1T unsalted butter or canola oil
  • 2 cups thinly sliced leeks (white part only) or fennel
  • 3 cups thinly sliced onions
  • 5 eggs
  1. Preheat oven to 400F
  2. Make the crust: 
    1. Mix flour, sugar, salt in a large bowl
    2. Pour in the oil and milk, mix well
    3. Press into a pie pan
  3. Prepare the filling:
    1. In a large skillet, melt butter/heat oil. Add leeks/fennel, onions, and a pinch of salt. Sauté until very soft and browned, about 20-30 minutes. Take off heat and allow it to cool.
    2. In a mixing bowl, beat the eggs and milk until mixture is smooth
    3. Add the onion mixture to crust
    4. Pour over the egg mixture 
  4. Bake for 50 minutes
    1. Cover with foil if top starts to brown
  5. Let sit for 10 minutes before serving. Serve hot, room temperature, or cold
