Cooked Greens with Bacon and Mushrooms
- 1 pound bacon, cut into bite-size pieces
- 2 cups sliced mushrooms (any variety works well)
- 1 pound kale or collard greens, washed and torn into bite size pieces
Cook the bacon in a skillet over medium heat until crispy. Add the mushrooms and saute until golden brown, about 5 minutes. Add the greens and cook until tender and still bright green, mixing together as it cooks.
Salt & pepper to taste. Try a little hot sauce!
Please do not drain the bacon fat before cooking the greens as these fats are essential to your health.
Makes 8 Servings
